Hydrolyzed Soy Lecithin Liquid (LeciOIL™ Hy50) is a product of the partial hydrolysis of food-grade soy lecithin. The fatty acids in position 2 of phospholipids are removed by enzymes. It consists of approximately 50% phospholipids, 18% total free fatty acids, 1% moisture, and 24% triglycerides, sterols, commercial pancreatin (enzymes, inhibitors), and various proportions of carbohydrates. This makes soy lecithin highly hydrophilic and has excellent solubility in water.
