What is lecithin made from?

Soy lecithin occurs naturally in plants and animals. In industrial production process, soybean lecithin can be extracted from soybean, rapeseed, sunflower seed, egg. Due to the massive crushing of soybeans in the world, most of the commercial soybean lecithins are derived from soybeans. To avoid soy allergens, some are derived from sunflower seeds. For some medicinal phospholipids, a small amount can be extracted from fresh egg powder.
